Recipe Ingredients for Garlic Lover's Vegetable Casserole

6 large red potatoes, sliced
3 medium zucchini, sliced
1 medium bell pepper, sliced
1 medium yellow onion, sliced
1 small eggplant, peeled and sliced
1/2 cup shredded Parmesan cheese
5 cloves garlic, crushed
1 tsp. dried oregano
28 oz. diced tomatoes
2 tbsp. olive oil

Recipe Directions for Garlic Lover's Vegetable Casserole

  1. Preheat oven to 350. Lightly spray a large casserole dish. (I usually have to use one large and one small dish)

  2. Toss potatoes with about 2 tsp. of the oil and bake uncovered for 10 minutes.

  3. Toss remaining veggies with the partially cooked potatoes and remaining oil. Place half of this vegetable mixture into prepared dishes, sprinkle with salt and pepper (to taste) and 1/4 cup of the cheese. Then add remaining veggie mixture

  4. Combine garlic, oregano, and tomatoes in a large bowl. Pour over vegetable mixture and top with remaining cheese.

  5. Cover and bake for 45-50 minutes.
