Garlic & Lemon Chicken Salad with Basil, Garlic & Lemon Dressing

Recipe Ingredients for Garlic & Lemon Chicken Salad with Basil, Garlic & Lemon Dressing

4 cups lettuce
2 unit+yield+from+1+lb+ready-to-cook+chicken Chicken Breasts
1/2 cup basil (fresh)
3 garlic cloves
1/4 cup lemon juice
2 tbsp vinegar
1/4 cup olive oil
1 g light mayo
1/4 cup onion
1/4 cup banana peppers
2 tsp pepper
1 tsp Sea Salt

Recipe Directions for Garlic & Lemon Chicken Salad with Basil, Garlic & Lemon Dressing

  1. FOR THE CHICKEN: Cook pre-marinated chicken for 30 minutes at 350 degrees, or until done (I use Wegman's pre-marinated & individually wrapped chicken breasts, but you can make your own marinade) Let it sit for no less than 1 hour covered in the fridge until completely chilled.

  2. Coarsely chop the chicken in to small pieces, but do not shred.

  3. Wash lettuce and basil separately. Set lettuce aside.

  4. DRESSING: In a food processor, combine basil, garlic cloves (skinned and quartered), lemon juice, vinegar, and olive oil. Process until the mixture is semi-smooth (not a paste, should not be creamy, but more corse).

  5. In medium bowl, combine chicken, banana peppers, dressing and mayo. Mix well. Add salt & pepper and stir until combined.

  6. TO SERVE: Place the desired amount of lettuce on a plate. Place desired amount on top of the lettuce. Serve.
