An exotic tasting recipe, adapted from a WW book. The original recipe included mushrooms and peas but I didn't have any. This is SO yummy even the kids loved it.

Recipe Ingredients for Garlic Ginger Chicken

500 g chicken breasts
2 onions
2 celery stalks
3 cloves garlic
1 tbsp minced ginger
1 tbsp soy sauce
1/3 cup cashews, roasted
1 cup bean sprouts

Recipe Directions for Garlic Ginger Chicken

  1. Cut chicken breasts into cubes.

  2. In a Pam-covered pan, cook chicken until light brown.

  3. Reserve in a plate.

  4. In same pan, cook onions, celery and garlic for 4-5 minutes.

  5. Add soy sauce, ginger, sprouts, cashews and chicken.

  6. Cook 5 more minutes until chicken is well cooked and veggies are tender.
