Garlic Chicken, Veggies, and Pasta Recipe

A recipe I made up years ago, a tasty mix of chicken and veggies over pasta. Great topped with a little Parmesan cheese!

Recipe Ingredients for Garlic Chicken, Veggies, and Pasta

16 oz Boneless Skinless Chicken Breasts
1 medium (2-1/2" dia) Onions
1 medium raw Bell Pepper Red
1 medium Yellow Hothouse Bell Pepper
1 medium raw Bell Pepper Green
2 clove Garlic
2 small Squash, Summer, Zucchini, Includes Skin
2 cup, sliced Squash, Summer, Crookneck And Straightneck
8 oz Spaghetti
2 serving Extra Virgin Olive Oil

Recipe Directions for Garlic Chicken, Veggies, and Pasta

  1. Mince garlic and put in non-stick skillet along with 2 tbsp of oil. Chop chicken into bite-sized pieces. Heat oil until hot but not smoking, then add chicken, stirring frequently.

  2. Meanwhile, chop onions and peppers into small pieces or strips. When chicken is done on the outside, add the onions and peppers. Continue stirring frequently.

  3. Fill a large pot with water for pasta and heat. While water is heating, cut zucchini and yellow squash into discs. Once the water is boiling, add the pasta and then put the squash into the skillet. Stir to mix with other veggies, then cover with lid. When the pasta is ready (about 10 minutes), so is the skillet mixture.

  4. Serve pasta, then spread chicken-veggie mixture on top. You can add some freshly-grated Parmesan or Romano cheese to finish this off.
