Recipe Ingredients for Garlic Chicken Soup

2 cups water
6 cups chicken stock
1 small white onion, diced
3 stalks celery, diced
3 cloves garlic, diced
375 g chicken
450 g frozen peas and carrots
1/2 tsp thyme
1/4 tsp pepper
1 tbsp salt (salt to taste)

Recipe Directions for Garlic Chicken Soup

  1. Strip rotisserie chicken of meat, shred meat, refrigerate

  2. Boil rest of chicken in water. Simmer 3 hours on medium low.

  3. Strain mixture, return stock to pot. Add water if needed.

  4. Add all ingredients apart from shredded chicken, bring to boil. Reduce heat and simmer 20 minutes.

  5. Add shredded chicken. Bring to boil. Reduce heat and simmer 20 minutes.
