Recipe Ingredients for Garlic Chicken

3 cups shredded Chicken
4 oz Pepper Jack Cheese
12 corn tortillas
1 tomato
4 oz sour cream
4 tbs chives
8 cloves garlic
1/4 cup cilantro
2 tbs lime juice
2 tbs white vinegar
1/2 cup olive oil

Recipe Directions for Garlic Chicken

  1. Make sauce:

  2. - 8 cloves garlic, chopped

  3. - 1/4 cup chopped fresh cilantro leaves

  4. - juice of one lime

  5. - 2 tablespoons white vinegar

  6. - 1/2 cup olive oil

  7. - Salt and black pepper to taste

  8. Place shredded chicken in a small bowl and pour 2/3 of the sauce over chicken and mix well.

  9. Mix in shredded cheese.

  10. Lightly spray a 12 cup cupcake pan with olive oil. Position corn tortilla in the center of each cup and scoop a heaping tablespoon of chicken mixture inside cup. Place in a 375 degree oven for about 10 minutes or until tortillas are lightly browned.

  11. Spoon on 1/3 tablespoon sour cream.

  12. Splash chopped chives over tostada cup

  13. Add diced tomatoes.
