Garlic Chicken Recipe

Great healthy homemade version of the packaged Birds Eye Garlic Chicken -- without all the fat. I make this up at the beginning of the week and reheat for dinner on work nights.

Recipe Ingredients for Garlic Chicken

8 oz rotini pasta
2 cups frozen mixed vegetables
2 bunch broccoli
4 oz mushrooms
1 lbs chicken strips
1/4 cup cream
1/3 cup parmesan cheese
1 1/2 tsp garlic powder

Recipe Directions for Garlic Chicken

Bring water to boil. Add rotini and cook according to package directions. Drain and rinse with cold water. Mix together broccoli and frozen vegetables with 2 tbsp water and up to 1/2 tsp garlic powder and microwave 8 minutes, stirring well ever 2 minutes. Place chicken strips in pot sprayed with pam - cook with up to 1/2 tsp garlic. Add rotini and cooked vegetables. Add drained can of mushrooms. Stir til heated. Season to taste adding more garlic if needed (I use Nature's Seasonings). Once warmed through, add half-n-half and cheese. Stir til cheese is melted. Serve hot.
