Leftover roasted chicken sauteed with minced garlic and broccoli florettes.

Recipe Ingredients for Garlic Chicken & Broccoli with Pasta

1 lb pasta, whole wheat
1/2 lb chicken (leftover roasted), diced
2 oz parmesan cheese
1 tbsp minced garlic
2 tbsp butter
2 tbsp olive oil
2 cups broccoli, cut into florettes
1 pinch kosher salt
1 fresh ground black pepper, to taste

Recipe Directions for Garlic Chicken & Broccoli with Pasta

  1. Combine olive oil and butter in a small skillet. Heat over med-high heat until butter is melted and bubbly. Add garlic. Sauteed until garlic is golden brown. Add chicken. Stir well and sautee until chicken is heated through. Add broccoli florettes, sprinkle with salt & peper, and stir fry until broccoli is bright green and crisp-tender.

  2. Meanwhile, cook pasta to desired doneness.

  3. Drain pasta and add chicken/broccoli mixture, Sprinkle with parmesan cheese and mix well. Serve immediately.
