Recipe Ingredients for Garlic Cheddar Mashed Potatoes

4 medium red potatoes
1/2 cup shredded cheddar
2 tbsp garlic, minced
1/2 cup skim milk

Recipe Directions for Garlic Cheddar Mashed Potatoes

Clean potatoes and then quarter them. Peel or leave skins on for extra fiber and color. Boil until soft when poked with a fork. While the potatoes are boiling, lightly brown the garlic in a separate pan. Using a masher, break the potatoes up a bit. Add the cheddar cheese, milk, and garlic. Mash until smooth. I like to use a hand mixer. It gets the job done faster.
