Very tasty! Cashews are optional, but they definitely add something to the dish.

Recipe Ingredients for Garlic Cashew Chicken

2 tablespoons sesame oil
8 tsp minced garlic
1 teaspoon ground ginger
2 green onions, chopped
2 teaspoons salt
2 1/2 pounds boneless skinless chicken breasts
1 small white onion, chopped
1 red bell pepper, thinly sliced
1/3 cup of chopped carrots (optional)
8 oz water chestnuts
2 cups water
1/4 cup of cashews
2 bouillon cubes, chicken
4 tablespoons soy sauce
4 tablespoons white sugar
4 tablespoons cornstarch

Recipe Directions for Garlic Cashew Chicken

  1. Heat sesame oil in a wok or large skillet. When the oil begins to smoke, quickly stir in 4 cloves minced garlic, ginger, green onions and salt. Stir fry until onion becomes translucent (about 2 minutes).

  2. Add chicken and stir until opaque (about 5-10 minutes).

  3. Add remaining 8 cloves minced garlic and stir. Add bell pepper, peas, carrots, and 1 cup of the broth/water. Cover and let simmer for a few minutes.

  4. In a small bowl, mix the remaining cup of chicken broth, soy sauce, sugar, and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.
