Pasta with Pecorino and Crispy Pancetta, Bacon & Proscuitto

Recipe Ingredients for Gargenelli Pasta, Pecorino, Pancetta, Proscuitto

1 tbsp shallot
1 tsp unsalted butter
2 cloves garlic
1 cup heavy cream
1 cup parmesan cheese
1 oz bacon
1 oz pancetta
1 oz prosciutto
1 tbsp onion
2 oz pecorino cheese
2 oz asiago cheese
2 oz romano cheese
1/2 tsp nutmeg
1 salt
1 pepper
8 oz pasta
1 tsp butter
1 tsp oil

Recipe Directions for Gargenelli Pasta, Pecorino, Pancetta, Proscuitto

  1. In a pan with 1 tbsp butter, sweat the shallots until translucent. Takes about 2 minutes

  2. Add 1 of the minced garlic cloves about 30 seconds prior to the shallots being done.

  3. Add the heavy cream and reduce to half.

  4. add 1/2 of the parmean cheese for flavor and desired thickness.

  5. Strain and reserve sauce in a new cooking vessel. If sauce is too thick, adjust with hicken stock.

  6. In another saucepand, render the bacon, prosciutto and pancetta.

  7. While the meats are sauteing, add the other minced garlic clove and inced onions to the pan.

  8. In the strained sauce, add the other cheeses over a low heat and allow to melt and vlend flavors.

  9. To the sauce, add the nutmeb, salt and pepper.

  10. Boil the past tubes until just a little more than al dente.

  11. Toss with the rendered meat and sauce. Add some additional butter and black turffle oil.

  12. Garnish with fresh herbs, chopped parsley and fresh black turffles if available.
