Recipe Ingredients for Garden Vegetable Soup (Weight Watchers)

1 1/3 cup sliced carrots
1 cup green beans
2 tablespoons Tomato Paste
1 cup diced onions
4 garlic cloves, diced
6 cups vegetable broth
3 cups diced green cabbage
1 teaspoon dried basil
1 tablespoon Oregano
1/2 teaspoon salt
1 cup sliced zucchini
1 green onion
1 pint sliced mushrooms

Recipe Directions for Garden Vegetable Soup (Weight Watchers)

  1. In a large non-stick saucepan, saute the carrot, mushroom, onion, and garlic over low heat until softened, about five minutes.

  2. Add broth, cabbage, beans, tomato paste, basil, oregano and salt; bring to a boil. Lower heat and simmer, covered, about 15 minutes or until beans are tender.

  3. Stir in zucchini and heat 3-4 minutes. Serve hot.
