Recipe Ingredients for GARDEN VEGETABLE SOUP RECIPE

8 cups broth
2 tablespoon olive oil
2 carrots, peeled and diced
1 large onion, diced
4 teaspoons garlic, minced
2 cups bok choy, chopped
6 oz fresh spinach
1 head cauliflower, chopped
1/2 pound green beans
28 oz crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon red pepper flakes
1 medium (8?) yellow squash
1 medium (8?) zucchini, diced
1 tablespoon grated parmesan

Recipe Directions for GARDEN VEGETABLE SOUP RECIPE

  1. Add the olive oil or spray a Dutch oven or deep soup pot with cooking spray and heat on MEDIUM HIGH. Add the carrots, onion and garlic and cook for about 5 minutes. Add all the remaining ingredients EXCEPT the zucchini, yellow squash and spinach; bring to a boil. Cover, reduce the heat to MEDIUM and simmer for about 15 minutes or until the beans are tender. Add the zucchini and cook until the zucchini are tender (10 minutes or so). Sprinkle with a tablespoon of parmesan and enjoy!

  2. Note: May need a bit more salt or a tablespoon of chicken/veggie bouillon, depending on your preferences
