a basic low-cal soup I tried and found lacking flavor/satisfaction when made with chicken broth. Here are the food values when made with College In "Garden Vegetable" broth:

Recipe Ingredients for a "Garden Vegetable" soup


"garden vegetable" soup:
1/2 c onion, diced
2 cloves garlic, minced
1/2 c green beans
2/3 c carrot, sliced
1 T tomato paste
1/2 t basil, dried
1/4 t oregano, dried
1/4 t salt
1/2 c zucchini, diced
1 1/2 c cabbage, chopped
3 c "Garden Vegetable" broth
3/10 g (1 spray) cooking spray

Recipe Directions for a "Garden Vegetable" soup

  1. saute onions, carrots and garlic in pan with a squirt of cooking spray.

  2. add broth and other ingredients (except zucchini) and bring to a boil.

  3. cover and simmer until cabbage and beans are tender (15-20 min)

  4. add zucchini and continue cooking for a few minutes.
