Recipe Ingredients for Garden Vegetable Quinoa

1 cup quinoa
1 cup chicken broth
1 1/2 cup zucchini, chopped
1/4 cup red onion, chopped
1/4 cup fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 1/2 cup tomato, chopped
3 cloves garlic, chopped
2 teaspoons extra virgin olive oil
1 tablespoon unsalted butter
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated parmesan cheese

Recipe Directions for Garden Vegetable Quinoa

  1. Cook the Quinoa according to the package directions

  2. In a large non-stick skillet pan, heat EVOO over medium high flame. Add onions, reduce heat to medium and cook for 4 minutes. Add garlic, stir in for 1 minute. Add in zucchini, cook for 4 minutes. Add in broth, tomato, butter and cook for 5 minutes. Last toss in the cooked quinoa, grated cheese, fresh parsley, basil and salt/ pepper to taste.
