Recipe Ingredients for Garden Vegetable Quiche

1 frozen pie crust
1 small red potato, baked and cubed
2/3 cup onion, chopped
2/3 cup zucchini, thinly sliced
1/2 cup yellow bell pepper, chopped
1 cup egg whites
1 cup skim milk
1/3 cup fresh basil
2 tbsp shredded chedder cheese

Recipe Directions for Garden Vegetable Quiche

  1. Preheat oven to 450 degrees. Poke pie crust with fork, then bake for 5 minutes, until golden brown. Reduce oven heat to 350 degrees.

  2. Saute chopped veggies over medium heat until crisp-tender, drain & pat dry, then combine with cubed baked potato.

  3. Combine egg whites, milk, and seasonings in separate bowl.

  4. Spread veggies in pie crust, top with egg mixture. Cover crust with foil to prevent over browning.

  5. Bake 50 minutes to 1 hour, sprinkling cheese over top in last 5 minutes and removing foil. Knife should come out of center clean.
