Garden Vegetable and Bean Soup Recipe

This is really good and can be customized any way you like. Taste it along the way, if you think the recipe has too much salt don't add as much, you like potato add more! Please do whatever you like because this soup easily has the potential to be the best soup you've ever made(= Plus, it's really good for you!

Recipe Ingredients for Garden Vegetable and Bean Soup

1 1/2 tsp Superior Touch Vegetable Base
3 cups water
1/2 c cabbage, chopped
15 1/2 oz beans, great northern, rinsed and drained
1/2 sweet onion, diced
2 garlic cloves, minced
1 large carrot, diced
1 medium white potato, diced
2 celery stalks, chopped
15 oz Fire Roasted Diced Tomatoes
1/4 c flat leaf parsley
1/4 c cilantro
1 tsp salt
1 tsp pepper
1 tbs soy sauce, reduced sodium

Recipe Directions for Garden Vegetable and Bean Soup

  1. Combine water and soup base (I really used better than bouillon but it wouldn't allow me to put that)

  2. Bring to a boil and add celery

  3. Simmer for 5-10 minutes

  4. Add potato, garlic, onion, cabbage and carrot

  5. Simmer for 15-20 minutes

  6. Add mustard greens or kale or some other green and simmer for 5 additional minutes

  7. Add tomatoes, beans, parsley, cilantro, salt, pepper and soy sauce

  8. Simmer for 5-10 more minutes

  9. Serve with warm whole wheat pita or WW bread and a glass of cold milk(=
