When you don't know what to do with all those tomatoes from your garden, the best bet is to can them. 1 serving is about 2 teaspoons. Serve as a relish or instead of salsa.

Recipe Ingredients for Garden Tomato Relish

10 lbs tomatoes
3 large sweet onions, finely chopped
2 medium sweet red peppers, finely chopped
2 medium green peppers, finely chopped
2 tsp. mustard seed
1 tsp. celery seed
4 1/2 cups vinegar
2 1/2 cups brown sugar, packed
3 tbsp. salt (canning)
2 tsp. ground ginger
2 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. ground cloves
1 tsp. ground nutmeg

Recipe Directions for Garden Tomato Relish

  1. In a large saucepan, bring 8 cups of water to a boil.

  2. Add tomatoes, a few at a time, boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and finely chop.

  3. Place in a stockpot. Add onions and peppers.

  4. Place mustard and celery seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add spice bag and remaining ingredients to pot. Bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until slightly thickened. Discard spice bag.

  5. Carefully ladel relish into hot 1-pint jars, leaving 1/2-in. head-space. Remove air bubbles; wipe rims and adjust lids.

  6. Process for 20 minutes in a boiling-water canner.
