Recipe Ingredients for Garden Stuffed (Twice Baked) Potato

5 tbsp land o' lakes butter with canola oil
2 large potato, baked with skin
1/2 tbsp extra virgin olive oil
1/2 tsp ground black pepper
1/4 tsp sea salt
2 garlic cloves
2 cups fresh spinach, shredded
3/4 cup Steamfresh Broccoli Cuts
3 tbsp crumbled feta cheese
2 tbsp black olives
1 oz sharp cheddar cheese, shredded
2 green onion
3 tbsp reduced fat sour cream

Recipe Directions for Garden Stuffed (Twice Baked) Potato

  1. Pierce potatoes with fork, rub liberally with evoo and salt and pepper, bake in a 400 degree oven for an hour

  2. Slice each potato in half and spoon out flesh

  3. In a bowl, mix the flesh, the microwaved broccoli, sour cream and butter

  4. Meanwhile, melt 2 tbsp of butter with garlic and shredded spinach, just until spinach is wilted, and add to bowl with potato mixture

  5. Add feta to bowl, along with salt and pepper as needed

  6. Spoon mixture into potato skins, top with shredded cheese, olives and green onion and place back in the oven for 5-10 minutes
