Makes 4 servings



Sprinkle potatoes with 2 t dried parsley before serving, if you wish. It is also delicious to add 1 cup of Cheddar cheese to the pulp mixture or to melt the cheese on top of the potatoes. Serve with salsa on the side

Recipe Ingredients for Garden Stuffed Baked Potatoes

4 russet potatoes
2 T butter
1 small onion, chopped
10 oz broccoli, chopped and thawed
1/2 c ranch salad dressing
1 T vegetable oil
1 salt and pepper

Recipe Directions for Garden Stuffed Baked Potatoes

  1. Preheat oven to 425. Microwave pierced potatoes on High for 12 minutes; bake for 15 minutes. Slice off top of potato tops. Scoop out pulp, keeping skins intact. Mash pulp in a medium bowl.

  2. Heat a small skillet over medium heat, add butter. Add onion and sauté until tender, about 5 minutes. Add onions, broccoli, and salad dressing to potato pulp, mix well.

  3. Brush outside of potato skin shells with oil.

  4. Spoon potato mixture into shells, dividing evenly. Place on a baking sheet. Bake potatoes until heated through, about 15 minutes. Sprinkle with parsley; salt and pepper to taste.

  5. For delicious leftovers, wrap them in plastic wrap and refrigerate them for up to three days. Then just reheat in the microwave for 5 minutes.
