Garden Soup- Nonfat Recipe

The veggies in this soup were exclusively from my garden, except the corn and onion! This makes a ton of soup.

Recipe Ingredients for Garden Soup- Nonfat

2 cloves garlic
1 tsp cornstarch
4 1/2 cups water
1 medium onion
2 medium tomatoes
4 cups low sodium chicken broth
1 cup frozen corn
2 chili peppers (I used 2 small red hots and one anaheim)
4 pods okra
1 tsp black pepper
4 cups squash
10 leaves basil, fresh

Recipe Directions for Garden Soup- Nonfat

  1. Dice garlic and onion finely. Spray pot with olive oil and cook on low until soft.

  2. Dice and rinse tomatoes if needed (I hate seediness). Add to pot. Add chicken broth and 2 cups of water. Add corn. Deseed and chop peppers and add to pot. Slice okra thinly and add to pot.

  3. Cover and bring to rolling boil.

  4. Meanwhile, add cornstarch to 1/8-1/4 cup cold water and mix well.

  5. Drizzle part over the soup, stir, and turn down heat.

  6. Simmer uncovered for 15 mins.

  7. Dice squash into bite-sized pieces. Chop basil.

  8. Add to pot with 2 cups of water.

  9. Boil uncovered for 5 mins, then simmer until ready to serve.

  10. Enjoy!
