No one would ever eat this and think, "This must be diet food." It's so tasty. And it's so savory that it can go for breakfast or dinner.

Recipe Ingredients for Garden Sausage Omelet

30 grams baby portabella mushrooms, chopped
2 tablespoons red pepper, chopped
1 tablespoon onion, chopped
1/2 teaspoon pesto
1/8 teaspoon pepper
1/2 cup Eggbeaters
1/2 ounce fat free feta
30 grams turkey sausage

Recipe Directions for Garden Sausage Omelet

  1. Saute veggies (peppers, onions, then mushrooms, slightly staggered) with pepper and pesto in a small skillet sprayed with Pam, about medium heat.

  2. Add sausage and let heat just so with the veggies. Pat dry once you take them out of the skillet.

  3. Pour Eggbeaters into skillet on medium heat and let just begin to set. Spoon veggies and sausage on one half; top with crumbled feta. Let set more until you can flip the bare half of the omelet over top the veggie-sausage-feta side.

  4. Let cook through on low-medium heat, about 6 minutes, being careful not to let overcook.

  5. Plate up and EAT!
