Recipe Ingredients for Garden Ratatouille Casserole

1 eggplant
2 tbsps Extra Virgin Olive Oil
1 cup chopped onion
1 cup chopped red peppers
1 cup chopped green peppers
3 cloves of garlic
2 zuchinnis
2 cups pasta sauce
1 tsp basil
1 salt
1 black pepper
6 slices provolone cheese

Recipe Directions for Garden Ratatouille Casserole

  1. Preheat overn to 400F

  2. Heat oil over medium heat in large nonstick skillet

  3. Add onion and cook till transparent.

  4. Then add eggplant, cook, then remainder of ingredients till tender.

  5. Add pasta sauce and seasoning and stir till coated.

  6. transfer to casserole dish and top with provolone cheese.

  7. Bake for 30 min.

  8. Let stand for 10 min then serve.
