Garden Pot Pie Recipe

A light delicious alternative to those heavy pot pies you're used to!

Recipe Ingredients for Garden Pot Pie

6 red potatoes
3 carrots
1 bell pepper
1/2 red onion
3/4 cup broccoli
2 tbsp. safflower oil
1 1/2 cup skim milk
2 tbsp. flour
1 bouillon cube
1 cup whole wheat pastry flour
1 tsp. baking powder
4 tbsp. coconut oil

Recipe Directions for Garden Pot Pie

  1. Cut up and steam the potatoes and carrots.

  2. Chop the bell pepper and onion in the oil. Do not drain.

  3. Remove the bell pepper and onion from the resulting oil/water mixture.

  4. Add 2T flour to oil/water mixture and cook over medium heat as a roux for the sauce. Add milk, boullion and milk.

  5. Make topping by cutting coconut oil in to wheat flour, then adding baking powder.

  6. Place in 9x13 pan, top with topping and bake at 375-400 for 8-14 minutes.
