Recipe Ingredients for garden mac and cheese

2 tbsp. light butter
1/2 medium white onion
1/2 large bell pepper
1 cup diced tomatoes
8 oz. whole wheat elbow macaroni
8 oz. 2% cheddar cheese

Recipe Directions for garden mac and cheese

Saute onion and bell pepper in butter until soft; boil noodles in salted water. When noodles are tender, combine onion, pepper, shredded cheese, tomato and noodles; pour into pan-sprayed 9x9 casserole. Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly. Makes four dinner-size portions. May add more vegetables to taste--this is especially good with more tomato and pepper.
