Recipe Ingredients for Garden Lasagna

4 sheets Lasagne Oven Ready
1 cup Petite Cut Diced Tomatoes
1 cup Tomato Sauce
1 large Egg, Whole
1/2 cup Ricotta, Part Skim Milk Cheese
1/2 cup, chopped Peppers, Sweet, Red
2 cup slices Squash, Summer, Zucchini, Includes Skin
3 cups Baby Spinach
150 grams Carrots, Baby
5 clove Garlic
3 oz Mozzarella, Part Skim Milk Cheese
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Garden Lasagna

  1. This is a very special meal because I make it on stove top, I hope you can follow in the layering of the pot.

  2. Preparing the Sauce...

  3. 1/2 cup tomato sauce with

  4. 1 cup of diced tomatoes in a bowl,

  5. Shred, zuchini, carrots, dice garlic, peppers and add to the bowl, mix

  6. The cheese mix,

  7. Wisk one egg with the ricotta, whip it by hand till it blends well.

  8. Let's start layering the pan or pot.

  9. Put on the bottom of the pot, 1/2 tomato sauce.

  10. Get 1.5 sheet of lasagna and cut them by hand to fit in the bottom of the pot. break it into the shape necessary.

  11. Place some of the tomato mix with vegetables on the bottom of the pan, some of it like half but not all...

  12. Layer the spinach

  13. Put the cheese blend onto

  14. Sprinkle the parmesan ontop of the ricotta mix

  15. Add 1.5 layers of lasagna, break it

  16. Press down a bit.

  17. Then add the rest of the vegetables and sauce to the top.

  18. Put the stove on medium for 20 minutes when it start bubbling put to low

  19. Uncover and put the mozzarella shredded ontop

  20. Put the lid on and cook for another 10-15 minutes.

  21. Poke the lasagna noodle and if it is done then close the stove.

  22. Let it all simmer for 10 minutes and sit still...then cut into 4 pieces and enjoy this light lasagna delight.
