Garden Garlic and Potato Soup Recipe

Makes 8 servings



Use 2 heads of garlic. Add a bay leaf, too.

Recipe Ingredients for Garden Garlic and potato soup

30 cloves garlic
3 T butter
1 salt and pepper
1 pound potatoes
2 T chopped parsley
1 t dried thyme
6 cups water

Recipe Directions for Garden Garlic and potato soup

  1. Remove papery husk form garlic cloves. Separage the cloves and slice them thinly.

  2. Wash and cut the potatoes into 1/4" thick pieces.

  3. Combine all ingredients and bring to a boil. Lower the heat and simmer until the potatoes are cooked (about 45 minutes).

  4. Serve with fresh basil or dill and plenty of black pepper.
