Recipe Ingredients for Garden Fresh Asparagus Soup

2 tbsp Butter
2 tbsp Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
0.5 tsp Salt, Table
0.5 tsp Curry Powder
0.25 tsp Ground Ginger
0.5 fruit without seeds Lemons
2 cup diced Potatoes, Red, Flesh And Skin
24 fl oz Organic Vegetable Broth
1 cup Lite Coconut Milk
2 cup Asparagus
2 oz Reduced Fat Sour Cream 30% Less Fat
0.25 cup, chopped Onions, Spring Or Scallions

Recipe Directions for Garden Fresh Asparagus Soup

  1. Melt butter and oil in a large saucepan over medium heat. Add onion and 1/4 teaspoon salt and cook, stirring often until golden (about 5 minute)

  2. Stir in curry powder, ginger, lemon zest and potatoes and simmer, stirring occasionally, for 5 minutes. Stir in broth, coconut milk, and asparagus. Bring to a simmer over medium heat, partially cover and continue to cook until the potatoes are tender, about 15 minutes.

  3. Puree the soup with an immersion blender or a regular blender (in batches) until smooth. Be very careful when moving around the hot liquid. Season with the remaining 1/4 teaspoon salt, and add pepper to taste.

  4. In a seperate bow, wisk creme fraiche (or low fat sour cream), lemon juice, and scallion greens (or chives) and garnish each bowl of soup with a swirl of this delicious mixture.

  5. Serve warm or chilled, enjoy!
