Recipe Ingredients for Garden Eggplant Parmigiana

14 oz diced tomatoes, fresh (canned if you don't have fresh)
1 medium onion, chopped
1 clove garlic, minced
1 tsp olive oil
1 tsp. Italian seasoning, (substitute chopped fresh herbs if you have them)
1 medium eggplant
1 pinch of salt
1 tbsp. Parmesan cheese
1/2 cup part-skim mozzarella cheese

Recipe Directions for Garden Eggplant Parmigiana

  1. Slice eggplant into 1/4 inch slices, sprinkle with a pinch of salt, let stand while you prepare the sauce.

  2. Cook onion and garlic in olive oil until onion is beginning to soften.

  3. Add Italian seasoning or fresh herbs and tomatoes.

  4. Cook sauce for 40 minutes, then pulse in a blender and strain out seeds.

  5. Spritz eggplant with olive oil or cooking spray, if desired, then place on a grill and cook until both sides are slightly golden.

  6. Laddle about 1/4 C of the sauce into the bottom of a casserole dish and spread it evenly.

  7. Add eggplant slices to the casserole dish, then remaining sauce, then mozzarella, then parmesan. (If you must layer the eggplant, spoon a little sauce between layers).

  8. Bake at 350 45 minutes to 1 hour, or until the eggplant is soft and the cheese is beginning to lightly brown.
