This is a basic recipe that allows you to use whatever you have on hand from your garden or farmer's market with a filling and tasty base of rice, lentils (and if you prefer meat) and leftover chicken or other meat or shellfish. The only two ingredients that never change are the rice and lentils. Otherwise, just add whatever you like that's flavorful, colorful, and adds a bit of crunch.

Recipe Ingredients for Garden Bounty Vegetable, Rice and Lentil Soup

1 cup uncooked medium grain rice
3/4 cup lentils
1 large onion
1/2 small potato
3 ounces chicken, thigh, meat and skin
1 large green pepper
1 small carrot
3/4 cup peas, mature seeds, sprouted
1 bunch broccoli
1 cup tomato
2 tablespoons sea salt
1 tsp basil
1/2 tsp dried red pepper flakes
1 tsp oregano

Recipe Directions for Garden Bounty Vegetable, Rice and Lentil Soup

  1. Cook rice per instructions on package. Add all dry and fresh ingredients chopped coarsely to stock or crock pot. Add 1/2 gallon of fresh water.

  2. Place on medium high heat until boiling. Then turn to simmer/low for one to two hours to allow flavors to infuse.

  3. Add cooked rice for last 1/2 hour.

  4. Freeze extra portions if desired.
