A simple salad that is a meal by itself.

Recipe Ingredients for Garden Basil Rice Salad

2 cups long grain rice
1/4 cup wild rice
4 cups water
1 oz fresh basil
1 large carrot
1/2 cup frozen peas
1/4 tsp salt
1/4 tsp pepper
2 cloves garlic
1/2 cup mayonaise

Recipe Directions for Garden Basil Rice Salad

  1. Bring rices and water to a boil for five minutes

  2. Reduce heat, cover and simmer for 10 minutes.

  3. Remove from heat and let stand, covered, for 15 minutes.

  4. Cut up basil and carrots.

  5. Toss everything together and let cool.
