Recipe Ingredients for Garbonzo Bean Stir-fry

2 tbs Olive Oil
1 tbs Oregano
1 tbs Basil
1 Garlic clove
15 oz chickpeas (garbonzo beans in can)
1 Zucchini (halved & sliced)
1/2 c. Mushroom (portobello)
1 Red Onion (chunked)
1 Red Pepper
2 Roma Tomatoes

Recipe Directions for Garbonzo Bean Stir-fry

  1. ? Heat oil in large skillet over medium heat.

  2. ? Stir in all the spices, add the garbanzo beans and zucchini. Stir well to coat veggies with the spices. Cook covered for 10 minutes stirring occasionally.

  3. ? Stir in mushrooms and cook until tender, stirring occasionally.

  4. ? Place the chopped tomato on top of the mixture. Cover and let the tomatoes steam for few minutes, but don't let them get mushy.

  5. ? Serve immediately.
