Simple, healthy dinner. Believe it or not, my 6 and 7 year old kids eat this up.

Recipe Ingredients for Garbanzos & Spinach

1 medium onion, diced
6 cloves garlic, minced
1 tablespoon olive oil
3 oz Portobello mushrooms
15 ounce tomato sauce no salt
1 1/2 cups garbanzo beans no salt
8 oz frozen spinach
1/8 tsp salt
1/8 tsp pepper
1/2 tsp turmeric
3 cups cooked brown rice

Recipe Directions for Garbanzos & Spinach

  1. Saute onion, garlic & mushrooms in oil for about 5 minutes - (save 1 uncooked clove to add at the end)

  2. Add beans and tomato sauce

  3. Cook spinach in microwave and then add spinach to sauce

  4. Mix in spices and the last clove of garlic

  5. Simmer sauce covered for 5 minutes

  6. Serve over brown rice
