A fresh Veggie and Chickpea Salad

Recipe Ingredients for Garbanzo and Vegetable Salad

1 cup broccoli florets, chopped
1 cup tomatoes, canned
1 cup mozzarella cheese, cubed
15 ounce garbanzo beans, rinsed and drained
2 tablespoons lemon juice
1 garlic clove, minced
1 cup carrots, sliced
1/8 teaspoon pepper

Recipe Directions for Garbanzo and Vegetable Salad

  1. Mix lemon juice, garlic and pepper in a small bowl.

  2. Toss other ingredients in, cover and refrigerate 4 -24 hours.
