This recipe sounds unusual but is quite tasty. The raisins steeped in vinegar give the salad and sweet and sour taste that compliments the mild garbanzo beans.

Recipe Ingredients for Garbanzo and Raisin Salad

1 cup raisins
1/4 cup red wine vinegar
2 teaspoons sugar
46 1/2 ounces canned garbanzo beans, rinsed
1 cup parsley, chopped or cilantro
4 green onions, sliced
1/3 cup olive oil
1/2 teaspoon ground cumin
1/2 teaspoon pepper

Recipe Directions for Garbanzo and Raisin Salad

  1. In a small saucepan, bring the raisins, vinegar and sugar to a simmer. Remove pan from heat and let cool.

  2. Combine all ingredients in a large bowl. Toss well. Can be served immediately or refrigerated for later.
