Spicy curry to serve over rice or cous cous

Recipe Ingredients for Garbanzo Potato Curry

2 cup Garbanzo Beans (Chick Peas), Organic
1 cup Yukon Gold Potatoes
4 tbsp Tomato Paste
1 cup Chicken Broth
2 tsp Curry Powder
1 cup Spinach

Recipe Directions for Garbanzo Potato Curry

  1. Dice and steam 1 yukon gold potato. Cook garbanzos and drain.

  2. In saucepan mix:

  3. Potato

  4. 2 cups garbanzos

  5. 4 T tomato paste

  6. 1 cup chicken or veggie broth

  7. 2 t curry powder

  8. 1/2 t chili powder or more taste.

  9. Stir together and cook over low heat. Add 1 cup raw spinach on top. Cover, cook til spinach is steamed. Stir occasionally. Add water as necessary.
