Recipe Ingredients for Garbanzo Pasta Soup

1 tablespoon olive oil
1 onion, chopped
1 1/2 cup chopped celery
3 garlic cloves, minced
30 oz. chickpeas, canned, rinsed and drained
1 tablespoon tomato paste
14 oz. diced tomatoes, canned, with juices
1/4 teaspoon dried crushed red pepper
3 1/2 oz. whole wheat macaroni, uncooked
3 teaspoon Italian seasoning
1/4 teaspoon garlic salt
6 1/2 cups water (or veggie water- broth will add sodium to final count)

Recipe Directions for Garbanzo Pasta Soup

  1. Heat 1 tablespoon oil in heavy large saucepan over medium heat. Add onion, celery, garlic and bay leaf; sauté until onion is golden and tender, about 7 minutes. Stir in Italian seasoning, turmeric, garlic salt and crushed red pepper.

  2. Add water, water, garbanzo beans, tomato paste and diced tomatoes. Bring to boil.

  3. Add pasta; reduce heat to medium and simmer until pasta is tender, add more water by 1/4 cupfuls if mixture is dry, about 15 minutes (mixture will be somewhat thick but some broth should remain).

  4. Discard bay leaf.

  5. Ladle pasta mixture into 10 bowls/ freezer containers.
