Makes 5 servings



I used gluten-free rolled oats to make this a gluten-free bread. I freeze soaked chickpeas for this recipe. 1 serving is 2 waffle squares.

Recipe Ingredients for Garbanzo-Oat Waffles

2 1/4 c water
1 1/2 c rolled oats
1/2 cup chickpeas (1 c soaked)
1 T oil
1/2 t salt

Recipe Directions for Garbanzo-Oat Waffles

  1. Soak garbanzos several hour or overnight in water to cover. Drain, discard water.

  2. Combine all ingredients in blender jar and blend until light and foamy, about 30 seconds. Let stand while waffle iron is heating. Batter thickens on standing. Blend briefly.

  3. Grease waffle iron with coconut oil for first waffle. Pour batter onto hot iron to cover. Set timer for 8 minutes; do not open iron until time is up.
