Recipe Ingredients for Garbanzo Bisque

1/4 cup broth, to saute
4 tbsp garlic, minced
3 stalks celery, chopped
2 cups red bell pepper, chopped
3/4 cup carrot, chopped
5 cups garbanzo beans, cooked
3 3/4 cup water
3 cups tomatoes, canned
1 tbsp salt, RealSalt
1/2 tsp pepper
1 1/2 tsp basil

Recipe Directions for Garbanzo Bisque

  1. Saute veggies in broth until soft and translucent.

  2. Add chickpeas, tomatoes and water to the pan.

  3. Season with spices, salt and pepper to taste.

  4. Bring to boil, cover, reduce heat and simmer 20 minutes, stirring occasionally.

  5. Purée and adjust consistency by adding more water if necessary. Check seasoning, reheat and serve.

  6. Best made the day ahead.

  7. Variation: Purée half of the mixture and add to the rest of the cooked ingredients to make a more chunky soup.
