This curry dish is great over rice or with bread.

Recipe Ingredients for Garbanzo Beans and Tomato Curry

1 T olive oil
1 onion, medium
3 cloves garlic
1 T ginger, finely chopped
1 T curry powder
14 1/2 oz diced tomatoes, low sodium
15 oz garbanzo beans
1/2 c cilantro (or parsley)
1 T lemon juice
1/4 tsp salt

Recipe Directions for Garbanzo Beans and Tomato Curry

  1. Heat olive oil in large sauce pan over medium high heat. Add onion and saute until tender, about 4 minutes. Add garlic, ginger, and curry and sute 2 min.

  2. Add tomatoes and beans and simmer 15 min.

  3. Stir in cilantro and lemon juice.

  4. Serve w/ a dollop of yogurt.
