Bean soup high in protein (ham can be omitted)

Recipe Ingredients for Garbanzo beans with Spinach and Mushrooms

5 cups dried garbanzo beans
2 small onions
5 cloves garlic
1/2 cup chopped ham
2 tbsp olive oil
3 cups mushrooms
2 bunches spinach
1 black pepper
1/2 tsp salt
1/2 tsp thyme
2 roma tomatos
5 cups of water

Recipe Directions for Garbanzo beans with Spinach and Mushrooms

Soak garbanzos for 1-2 days, when doubled in size put into a large pot with the water, 1/2 the onions and the garlic. Cover and boil for 2 hours or until soft. Add the rest of the ingredients except tomatoes and cook for 30 min. Add tomatoes just before serving
