Recipe Ingredients for Garbanzo Bean and Zucchini Salad

0.5 lemon yields Lemon Juice
4 tbsp Olive Oil, Extra Virgin
259 2/5 grams Garbanzo Beans
2 medium Squash, Summer, Zucchini, Includes Skin
0.5 cup Corn, Sweet, Yellow
1/2 cup chopped raw Shallots
5 romaine Romaine Lettuce
1 oz Parmesan, Grated Cheese

Recipe Directions for Garbanzo Bean and Zucchini Salad

  1. For the Vinaigrette: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until combined.

  2. For the Salad: Place the garbanzo beans, zucchini, corn, red onion, and lettuce in a large salad bowl. Pour the vinaigrette over the salad and toss well. Garnish with the crumbled Parmesan cheese and serve.
