Serve over brown rice, or a quinoa, brown and wild rice mix. Add any other vegetables you have on hand.

Recipe Ingredients for Garbanzo Bean Veggie Stir Fry

1 lb mushrooms, sliced
85 g baby carrots, julienned
1/2 cup celery, sliced
1 cup cauliflower, chunked
2 cups broccolini, sliced
2 cups sugar snap peas, cut in half
2 cups garbanzo beans, rinsed and marinated in
1/3 cup soya sauce
1 tsp ground ginger
1 tsp garlic granules

Recipe Directions for Garbanzo Bean Veggie Stir Fry

  1. Combine soya sauce, ginger and garlic. Pour over garbanzo beans to marinate.

  2. Prepare all vegetables as indicated.

  3. Heat a small amount of oil in wok or frying pan. Cook vegetables lightly, until tender crisp.

  4. Add in garbanzo beans, strained out of marinade. Reserve marinade. Cook until beans are heated through.

  5. Whisk a small amount of cornstarch into reserved marinade. Pour into stirfry. Heat until slightly thickened.

  6. Serve over rice or rice pilaf.
