Fiber & vitamin A filled salad

Recipe Ingredients for Garbanzo bean & couscous salad

2 cloves garlic, chopped
1 zucchini, grated
1/2 c red pepper, chopped
110 g garbanzo beans (1 19oz can)
1/3 c scallions, chopped
1 T olive oil
2 T cider vinegar
1/4 t salt
1/3 c whole wheat couscous
4 c spinach

Recipe Directions for Garbanzo bean & couscous salad

  1. Saute garlic, zucchini and red peppers in pan with cooking spray, about 5 minutes.

  2. Add beans and saute until heated through.

  3. In food processor, puree scallons, slowly adding oil, vinegar, salt and black pepper to taste.

  4. Add scallion mixture and couscous to pan, heat through.

  5. If desired, saute spinach in pan with a few drops of water until very slightly shrunken, enough to heat up spinach.

  6. Arrange 1 cup spinach on plate and serve 1 cup of bean mixture on top.
