This is a kind of "kitchen sink" soup -- made of what you have on hand. If you have kidney beans instead of pintos -- great! If you have poblano peppers instead of bells -- great! Fresh corn? Frozen? Canned? GREAT! Ham, bacon, kielbasa, or turkey bacon instead of Canadian bacon -- go for it! Use what you have and the crowd will love it (and you!)

Recipe Ingredients for Game Night Bean Soup (aka Lynn-Soup)

20 oz pinto beans
8 oz red onion
8 oz celery
8 oz bell pepper
4 oz carrot
10 oz Rotel tomatoes
15 oz canned tomatoes
24 oz vegetable juice
4 oz fresh spinach
12 oz whole kernel corn
6 oz pearl barley
4 c chicken stock
2 oz bacon
1 c potato flakes
3 T olive oil
2 cloves garlic
1 oz fresh basil
1 oz fresh oregano
2 t salt
1 t black pepper

Recipe Directions for Game Night Bean Soup (aka Lynn-Soup)

  1. Soak beans overnight.

  2. mince onion, celery, peppers. Grate carrots.

  3. Fry bacon crisp and drain on paper towels. Add olive oil to bacon grease and use it to saute onion, celery, pepper and carrot. Deglaze pan with chicken stock and add canned tomatoes and Rotel tomatoes and V-8 vegetable juice. Bring up heat to a boil. Add rinsed barley and drained and rinsed pintos.

  4. Return to a boil and the turn heat down to med low, cover, and cook for 2 hours, stiring occasionally.

  5. Add crushed garlic, chopped fresh herbs, and season to taste with salt and pepper. Return to covered med-low setting (replenish liquid if too much has boiled away) and continue to cook for 1 hour.

  6. Serve in handled mugs with cornbread -- and let the games begin!
