Central American Bean and Rice Dish

Recipe Ingredients for Gallo Pinto

1 1/2 cups basmati rice
1 yellow onion
3 cloves garlic
2 med carrots
1/2 red pepper
1/2 green pepper
1/2 yellow pepper
2 tbsp olive oil
19 oz black beans
2 stalks celery
3 cups water
2 tsp coriander
3 tsp cumin
1/4 tsp salt

Recipe Directions for Gallo Pinto

  1. Combine rice and water and cook.

  2. Chop all veg, saute in oil until tender. Add spices, stir for a minute. Add beans and liquid. Cook until bean mixture is reduced and very creamy, do not mash beans.

  3. Combine well and gently with rice.

  4. Each serving about 1 cup.
