These cookies are a three colored polvoron typically known as Trebol cookies because they are three different colors.

Recipe Ingredients for Galletas Trebol

1 cup unsalted butter
3/4 cup powdered sugar
1 1/2 tsp vanilla extract
2 cup all purpose flour

Recipe Directions for Galletas Trebol

  1. In a medium bowl place the butter and sugar. Beat with electric mixer until mixture is thoroughly smooth. Add vanilla and sifted flour. Mix well and make a dough.

  2. Divide the dough into three equal parts. Add one or two drops of food coloring to each, (a different color) and with a trowel or spatula, mix thoroughly.

  3. Cut three pieces of cooking parchment paper. Wrap each piece of colored dough on a piece of paper, trying to give a cylindrical shape. Turn the ends of paper and squeeze as much as possible, so that the dough is well wrapped in the form of roll. Refrigerate for one hour minimum, or overnight.

  4. Preheat oven to 350 degrees F.

  5. Unwrap dough rolls and join in a triangular shape. Cut each biscuit slice about 1 / 2 cm thick, with either a thin-bladed knife or with a piece of thread

  6. For the latter method, place the thread under the roll of dough, cross the ends and then pull both ends to cut out each slice.

  7. Place cookie slices on baking sheet covered with cooking parchment paper and bake for 10-12 minutes or until edges are lightly browned. Cool on racks.
