Recipe Ingredients for Gala Stuffed Chicken Breasts

1/2 chicken breast
4 oz. long grain and wild rice
1/2 tbsp. butter
1/8 c. diced celery
1/8 c. chopped green onion
2 oz. crushed pineapple, drained
1/4 tsp. salt
1/2 tbsp. brown sugar
1/4 tsp. cornstarch
1/8 tsp. ginger
1 tbsp. pineapple juice

Recipe Directions for Gala Stuffed Chicken Breasts

  1. Prepare wild rice according to package directions (5/8 c. chicken broth can be substituted for water). In frying pan, melt butter. Add celery and onion. Saute until tender. Stir saurteed vegetables and drained pineapple into rice.

  2. Using 1/3 c. measure, make 2 stuffing mounds on broiling pan. Top with half of breast. Sprinkle chicken with salt. Add water to bottom of pan (app. 1/2 c.).

  3. Cover with foil. Bake at 350-375 degrees for 40 minutes.

  4. In small saucepan, mix brown sugar, cornstarch, and ginger. Stir in reserved pineapple juice. Cook over medium heat. Remove cover from chicken after 40 minutes and brush chicken with glaze. Bake uncovered 15 minutes. Serves 2.
