This is the only way I'll eat carrots! Adapted from http://www.food-india.com/recipe/R001_025/R004.htm. The raisins/dates are optional.

Recipe Ingredients for Gajar Ka Halwa - Indian Carrot Pudding

2 lb carrots, grated
1 cup sugar
3 tbs butter
120 grams low fat sweetened condensed milk (1/2 cup)
3/4 cup ricotta cheese, low fat
1/4 cup pistachios, chopped
1/4 cup almonds, slivered
2 tbs raisins or chopped dates (optional)

Recipe Directions for Gajar Ka Halwa - Indian Carrot Pudding

  1. Grate carrots, then cook in a large pot with the butter on medium heat for 15-20 minutes, stirring.

  2. Add the condensed milk, ricotta, and sugar and cook on medium-low for 15-20 minutes.

  3. Stir in nuts and raisins/dates if using and serve.
