Thai stir-fried chicken with ginger

Recipe Ingredients for Gai Pad King

1 lb. boneless skinless chicken breast, cut into bite-sized pieces
4 green onions, cut into 1-inch pieces
2 cups mushrooms (dried cloud ears, soaked and drained)
1 onion, sliced
4 cloves garlic, minced
3 tbsp. fresh ginger, julienned
1 tbsp. fish sauce
1 tbsp. soy sauce
1 tbsp. oyster sauce
1 tbsp. rice vinegar
1 tsp. brown sugar
3 tbsp. peanut oil

Recipe Directions for Gai Pad King

  1. Mix fish sauce, soy sauce, oyster sauce, and rice vinegar in a bowl. Add chicken pieces and stir to coat thoroughly. Set aside.

  2. Heat oil in wok over high heat. Stir-fry garlic and some of the ginger until fragrant (do not let garlic brown). Add onions and cook until soft. Add chicken pieces, reserving the marinade. Stir-fry until lightly browned, then add marinade.

  3. Add the mushrooms and the rest of the ginger and stir-fry until chicken and mushrooms are done. Add green onions and cook one or two minutes more.

  4. Serve hot with jasmine rice.
